Wild Duckbreast with Soba Noodle Salad

Soba Noodle Salad

 

300g (long) green beans

300g sobanoodles

4 spring onions

1 T black sesame seeds

 

Dressing:

1,5 T tahin (sesamepaste)

2 cloves of garlic, grated

3 T clear rice vinegar

3 T olive oil

1 t sesame oil

2 t japanese/light soya sauce

1 T sugar

 

Cut the green beans diagonally into long strips. Transfer into a big pot with salted boiling water, boil for 2-3 minutes, drain in colander, rinse with cold water. Drain again.

Boil the sobanoodles or according to directions (4-5 minutes), drain, rinse with cold water until noodles are cold and drain again.

 

Mix soba noodles, green beans, spring onions and black sesame seeds in a big bowl. Add the dressing just before serving.

 

With sobanoodle salade, with long green beens, spring onion, black sesameseeds and tahindressing.

 

I served it with wild duckbreast (marinated in : mirin, white wine, ricevinegar, honey, soyasauce, ginger, garlic, sesame oil). Then smoked and grilled.
