Lamb, grilled vegetables and couscous
Grilled (leg of) lamb, marinated (for 3 hours) in olive oil, garlic, juice of half a lemon, pinch of ground cinnamon and cumin.
Couscous with a dressing of 3T olive oil, juice of half a lemon, lots of fresh coriander & chives. And some chopped olives.
Grill the aubergine, courgette and onion in a grillpan, transfer to an ovendish and mix with tabil :
1 T corianderseeds (crush them a little)
1 t carawayseeds (crush them a little)
2 cloves of garlic, chopped
1/8 t cayennepepper
1/8 t currypowder
½ t ground cumin
3 T olive oil
Let marinate for at least half an hour.
Just before serving, put in 200C oven for about 25 minutes.
(At this moment you can also add some (cherry)tomatoes)
It worked together very well. I even liked the couscous!
The only thing that didn't work were the plates. Too loud. :)
