Thai Salmon Fish Cakes with Sweet Chilli Sauce

Thai Salmon Fish Cakes

450g salmon fillets, chopped

1 t Thai green curry paste

1 egg

2 T nam pla (Thai fish sauce)

1 T palm sugar

2 T cornflour

1 lime, juice

3 T Coriander, finely chopped

0.5 t Salt

0.5 t ground black pepper

I put everything in the blender en blend.

Don't blend to long, you don't want babyfood.

And I added a few long green beans after that, chopped in 2 mm pieces.

Pan fried them, slowly. They were quite wet, so it took a while before I could turn them.

Serve with chili sauce.

They were alright, even nice. But I keep looking for a better recipe.

First time I tried fish cakes I used rice flour. Today it was cornflour.

But I had the feeling I could taste the flour in the end result. Not nice.

Maybe it's different when you deep-fry them?

I served them with Thai Green Papaya Salad (Som Tum Thai) which tasted much better than it looked. :-)
