Lemon Chicken

Lemon Chicken

 

Cut into cubes:

400 gr chickenbreast

 

Marinate for 20 minutes in mixture of:

1 egg white

2 t cornflour

1 t salt

1 t sesame oil

 

Boil large pot of water, when it's boiling, take of the heat and add the chicken. Stir with chopsticks to prevend the chicken from sticking together. Leave it for about 4 minutes in the water. Then drain.

 

Heat a wok and add mixture of :

6 T water or chickenstock

3 T lemonjuice (about 1,5 lemons)

1 T sugar

1 T light soysauce

1,5 T shaoxing ricewine

1,5 T chopped garlic

1 dried chili

1 t cornflour

 

Let it simmer for about a minute before you add the chicken.

Heat through and in the end, add

2 t sesame oil

2 T spring onion

 

I didn't really like it. It is the second time I tried this dish.

The first time I stirfried the chicken. Today I poached the chicken.

Maybe frying the chicken will make a big difference, but I'm not gonna try. No more lemon chicken for me!
