Swordfish with Mango Salad and Chilli Spaghetti
Marinate swordfish in mixture of limejuice, oil, corianderroot, green chilli, spring onion.
Chilli garlic spaghetti
Slowly panfry 4 chopped cloves of garlic and 1 chopped red chilli in 4 T olive oil.
Add salt.
Add cooked spaghetti
Thai Mango Salad
Cut jullienne : 1 mango, 1 cucumber, 2 grilled red bellpeppers.
Add 3 T chopped coriander, 3 T chopped mint.
Dressing:
80 ml limejuice
2 T fishsauce
2 T sweet chilisauce
1 T palmsugar
1 t grated ginger
Sprinkle with 2 T chopped, roasted peanuts.
