Crêpes Suzette
Mix:
125 gr plain flour, sifted
2 eggs
pinch of salt
75 ml milk
into a thick batter without lumps.
Then first add and mix:
260 ml milk
And
30 gr melted butter (microwave)
Leave this batter for about 30 minutes, covered with a towel.
Don't ask me why the melted butter and why the resting, but the pancakes came out perfect. I never was a big fan of pancakes, but these were soft but not floury. I really liked them.
Ah, and for this Crêpes Suzette version I only added a warm mixture of cointreau, sugar and a splash of lemonjuice. ( I didn't have orangejuice, so I just improvised a little)
