Saddle of Hare with portosauce

Saddle of Hare, slightly smoked before panfrying in goosefat.

Unfortunately I ran out of morel-mushrooms and I tried adding fresh pieces of king oyster mushroom to my porto-sauce. It wasn't a big succes. I think it should be morels, or nothing else.

 

Served wit red cabbage, slowcooked pears and mashed potatoes with spring onion.
