Pasta with zucchini, smoked salmon and cream

Simple dining al fresco before the days begin to shorten. Usually we don't eat heavy cream-type pasta dishes during summer - it's too hot. But this year it 's been cool, so bring on the cream!

 

250 grams fresh, short pasta, cooked al dente

1 medium zuke, halved and sliced thin

3-4 ounces smoked salmon, chopped into pieces

grated zest of 1/2 lemon

1/2 cup heavy cream

salt and pepper to taste

 

Saute the zucchini in a little bit of olive oil until soft. Add the smoked salmon, cream and lemon zest; cook over low heat until warmed through. Season with s&p. Add the cooked pasta, stirring to combine. Portion into 2 plates and squeeze a bit of lemon juice over all just before serving.
