Pork Chops Are Marinating
I found this recipe that looks incredible. The grill has been turned on for the season so I am marinating some pork chops in hopes that they can get on the grill tonight along with some asparagus and musk melon. The marinade is a
Basil-Lemon mixture with:
1 12-oz. can frozen lemonade concentrate, thawed
1/2 C. basil leaves, cut into thin strips
4 Tbs. olive oil
1 or 2 cloves garlic, crushed
Mix the first four ingredients. Reserve 1/4 C. of the marinade to brush on while grilling. Pour the rest of the marinade over the pork chops, and refrigerate them for 2 hours, turning once in the process. Grill the pork chops for approximately 20 minutes, turning them once and basting them. What will give the dish even more zest is grilling melon slices along with the pork chops. Be sure to brush some of the marinade on the melon, too.
Yield: 4 servings
Of course, in our case we are doing extra chops and it will serve three with leftovers. Michael has a goal to gain five healthy pounds before school begins again...five that he has lost during baseball season and probably ten less than he should gain, especially if he is going to play football next school year.
