Rappahannock River Oysters on the Half Shell
Grated Apple, Salad Turnip and Celeriac Salad
Sunchokes roasted with olive oil and sea salt topped with sauteed Chanterelles.
Served with Old Dominion Brewing Co. Baltic Porter.

The oysters were good on their own, but adding a few drops of Heart of the Hudson Vodka (made from apples) worked really well.
We had never eaten sunchokes before, but will again! They're sort of like potatoes, but a bit nuttier.
I used 'Pink Lady', 'Goldrush', and 'Winter Banana' apples in the salad along with a surprisingly tender celery root and some mild turnips.
We had bought yogurt-y drinks from Clear Spring before, but not their cheese. Clare's Camembert has an even and creamy texture with a great flavor.
I had some of Dominion's Baltic Porter when they did a batch a few years ago and am glad to see that they brought it back.
