Mushroom + Burrito = Shroomito?

This is one of the only things I can actually cook.

 

Instructions:

 

1. Pour a little olive oil in your pan and turn on the heat.

2. Break up some portabello mushrooms (I used "baby bella" mushrooms for this one) and drop them in. Just cook all of them at once; they're not as big as they look, and you know the leftovers will just go bad by the time you open your fridge again, anyway.

3. Move 'em around 'til they get a little brown.

4. Lay out a whole wheat taco wrap thing (the bag says it's "mountain rollup bread", but don't be fooled; it's just a damn taco wrap thing).

5. Lay down a pile of mexican blend shredded cheese (sharp cheddar, monterey jack, asadero, and queso blanco) on the shell.

6. Take the mushrooms off the hot pan and put them right on the cheese so it melts. If there's any liquid in the bottom of the pan, make sure it doesn't get on your taco shell or it will just dissolve and fall apart and make a big (though tasty) mess.

7. Then stuff the shell full of as much salad as you can, since YOU DO NOT EAT ENOUGH VEGETABLES YOUNG MAN. I tried Champs Elysées mix (green leaf lettuce, frisée, radicchio, and carrots) from Trader Joe's and it tasted pretty good.

8. Wrap it up and chomp chomp nom nom nom.
