Chawanmushi

A steamed egg-broth based custard. At the bottom of the smooth egg layer was a chunk of chicken and a whole shrimp, floating (or embedded) on top were slices of shiitake mushrooms and yuzu rind! The yuzu was so aromatic and comforting. Just what is needed on a cold day.
