A short list of essentual probiotic food choices 1 through 15 that is missing from our mainstream modern day diets .

Yes by large most of the polulation around the world has lost touch of what their body really needs to be Super Charged with bioavailable Nutrition that our forefathers or ancesters practiced for thousands of years . We have lost their traditiional culinary holistic practice of culturing foods into probiotic power houses for the human immune system .

Very important first note! In the view of Holistic Chef Barry the current food supply that we now live under can in most cases not be trusted to deliver whole foods of raw cultured probiotics that is required for true support of our intestinal health . The problem is the process food industry is on some kind of killing campaign to destroy or pasturize all foods including the life giving enzymes that are needed by all probiotic foods to truly be whole . To destroy a food then later add a synthetic or fermented probiotic unrelated to the original product is like trading paul for mary and makes know nutritional sence to the good earth chef what so ever . And given the fact in some cases that the end product is often containing added sugar preservatives and additives. 1-Green Peas

Studies coming out of Japan have found the following discovery about green peas.

Green peas may be able to help fight off infections and colds thanks to their inherent probiotic bacteria. Tip: Heat can be detrimental to probiotics so add raw peas to your salad or eat as a snack.


2- Dark Chocolate or Raw Cacoa

A 2010 study published in the International Journal of Food Microbiology found that probiotics in dark chocolate survived the passage through the stomach and small intestine better than those added to liquid milk (91 to 80 percent versus 20 to 31 percent).



The highest source of the fat soluble vitamin K-2 is found in natto. A fermented soy bean or any fermented legume of Japanese macrobiotic cuisine that has a condiment of mustard sauce and soy usually and is enjoyed with rice.

Natto has a very strong pungent taste that many people will not take to so this is what the Good Earth Chef does to mask it. Simply counter with a sauce that goes well with the natto.


How to make a tasty natto dressing?

For example you can take some good quality nut butter and in a small mixing bowl add some miso paste honey raw ,apple cider vinegar and spicy Thai chili powder or red Cayenne pepper with grownd cinnamon to taste . You can thin the mix using some coconut or flax seed oil cold pressed.


4- Kefir

It can be water kefir made fermented from coconut water .

Or it can be organic raw dairy kefir made from the milk of goats . Ok I know this kind of incredible probiotic dairy product will not be found today in your retail supermarket unfortunately . This is really to bad as most of the population is at the mercy of the corrporate conventional cow dairy industry that kills or pasturizes the living fill in the blank out of what was once a good healthy wholsome food. 5-Miso Paste

A firmented legume typically sourced from soybeans, fermented rye, beans, brown rice, barley and most other grains and beans can be used to make miso.Adding seaweed bean sprouts and leafy micro greens will add super nutrition and probiotic support for your intestinal good health .

Add the miso past at the very end after the heat is turned off for best efficacy of support .


6- Kumpucha

A tea beverage, but it actually starts as a fungus flush with probiotics. Kombucha is currently experiencing a mass resurgence in popularity with widespread commercial distribution and sales projected to reach $500 million by 2015, but the Chinese have enjoyed this tonic for thousands of years.


7- Umeboshi Plums

Holistic Chef Barry recommends Yogurt of Goat milk over the cow version and why is this?

Goats do not do very well in captivety and are left to graze freely over pastured land to eat all the herbs and grasses. In contrast cows are confined to feed lots fed AFFCO soy corn and grains that are not the normal diet of these animals . A cow in confinement like this may never see a blade of grass in their life time. Go for the Yogurt of Goat. Raw is best over pasturized if you can find it?



The best sauerkraut is raw, fermented cabbage. This tangy dish contains at least four different species of gut-friendly lactic acid bacteria, making it a trusted source of probiotics.



Best to make your own fermented vegetables, including pickles to make sure your end product has no preservatives and additives to improve your intestinal tract health. Youtube can teach you how to make your own cultured foods in the comfort of our good earth kitchen . The gut-friendly lactobacillus bacteria used in the fermentation process act as a probiotic, which help keep your gastrointestinal (GI) tract healthy and they also create B vitamins. One caveat? Salt is an important part of the “pickling” process, so if you’re following a low-salt diet you may want to avoid or limit your pickle intake.Holistic Chef Barry uses pink Himalayan sea salt over the commercial sodium chloride ( Table Salt )

12- Tempeh

Tempeh, a cultured grain made from fermented soybeans that contains probiotics. “Tempeh is very low in salt, making it a good alternative to meat, and it’s high in fiber and protein and is very digestible to the human tract unlike uncultured soy products that in the opinion of the Good Earth Chef should be avoided.


13-Tradditional Style Korean Kim-Chi

An Asian preparation of cabbage typically also contains spices like ginger and garlic, as well as additional vegetables like radishes and scallions and a red hot chili sauce .

If probiotics don’t have an environment where they can thrive, they can’t do as much good -- and that’s where prebiotics come in. Prebiotics are non-digestible fibers that help good bacteria flourish inside your intestines. Found in foods like legumes, oatmeal, onions and artichokes, prebiotics help strike the right digestive balance inside your body. And according to Dr. B.J. Hardick, consuming the proper foods should give you a healthy dose of both: “When consuming cultured foods as part of a balanced diet, you’re going to consume a great variety of probiotics, and eating a variety of fruits, vegetables and whole grains will offer the necessary prebiotics needed for probiotic metabolism,” says Hardick. "Both are necessary for healthy GI function."


Soluble Fiber of some of the best prebiotics to eat for our intestinal support .

Dietary fiber is an indigestible carbohydrate provided by plant-based foods. One type, called soluble fiber, dissolves in water to form a gel. It's especially rich in prebiotics called fructo-oligosaccharides, which includes compounds called inulin and oligofructose. These compounds are not broken down by stomach acid or digestive enzymes but are fermented and used by beneficial bacteria in the colon, especially two types called lactobacillus and bifidobacter. Natural sources of these prebiotics include almonds, bananas, apples and vegetables such as Jerusalem artichokes, wild yams, jicama, leeks, asparagus, chicory, garlic and onions. Legumes such as fermented soybeans are also high in prebiotics, as are predigested sprouted whole-wheat, whole-grain oats and corn.


15- Predigested seeds and non gluten grains including wheat grass.

As gluten grains such as wheat berries grow into wheat grass all the gluten proteins are washed away and all the enzyme inhibitors as well.
