presenting the strawberry-apricot crumble
so good, i made it twice in one week. i've forgotten how much i enjoyed crumbles - and when i had to come up with a quick dessert for an impromptu barbecue, this was the first thing that came to mind. originally I wanted to make one with strawberries and rhubarb, but there was no rhubarb to be found, so i had to improvise. enter apricots: thick and meaty, with a sweetness that plays up nicely against the strawberry - it came out so well!!
