Egg Salad Sandwiches, Deconstructed, Reconstructed.
Last night I attempted to recreate our favorite egg salad sandwiches from Europane in Pasadena (at a fraction of the cost). The trick was to medium boil the eggs, to add just enough mayo to make things stick a bit, and to not mash things up so much. I lathered some red pepper spread on toasted thin sourdough slices, added a layer of baby lettuce greens, and then finally topped it with the egg salad.
Came pretty close, I think. If nothing else, it was a hit with every member of the family--a rare occasion.
