Kimchi is typically made with Napa Cabbage tossed in a porridge/soy sauce/chilli pepper/garlic/onion mixture and left to ferment for one day. I tried this instead with kale. But being a tough vegetable, kale required at least 2 days of fermentation before reaching the sour tangy flavor typical of kimchi vegetables. Vegans and vegetarian friendly, this dish is also stupid cheap to make. Definitely give it a try if you're looking to save a buck on making your own food while going easy on the wallet.
