Seitan, Stage 2
The seitan that ate Atlanta. I was startled by how much it grew in the broth. Little scary, actually.
Next time, I'll make sure the seitan's surface is smooth before I put it in the broth. I wasn't that careful this time, and the small lumps and bumps grew huge when the gluten swelled up.
