Baked Chickpea Cutlet
Usually, when I bake the chickpea cutlets from Vcon, they don't brown enough for my taste in 20 minutes. On the other hand, I'm usually so hungry when I make them that I go ahead and eat them anyway -- or pan-fry them, which sears them well but also adds a fair bit more fat.
These, at least, I made far enough ahead that I could double the baking time, and get a nice, if modest, sear on them.
