Pulled pork, cole slaw, and baked beans

I know it's a little odd to put bell pepper in the cole slaw, but I wanted some color and that's what was in the fridge. I soaked the beans for like 2 days, but they still took forever to cook - decided to bake them because they still weren't done after a few hours of simmering.
