Tonight I made Nando's Coconut Chicken Stir-Fry. Delicious.

 

Being a veggie, I swapped the chicken for Quorn fillets and marinated the fillets for 48 hours :D

 

Full Recipe below:

  

INGREDIENTS:

-500g diced chicken breast

-1 bottle Nando’s Lime & Coriander Marinade

-1 tbsp oil

-1 clove garlic, crushed

-1 inch ginger, grated

-300g ready-prepared stir-fry veg mix

-300g egg noodles, cooked

-1 tin coconut milk

-1 bunch coriander, chopped

 

METHOD:

Marinade the chicken in half of the Nando’s Marinade for at least 30 minutes

 

Heat a little oil in a wok or frying pan

 

Add the ginger, garlic, Marinated chicken and stir-fry for 5 minutes

 

Add the vegetables and the noodles and stir-fry for 3 minutes

 

Add the remaining Marinade, coconut milk and coriander and stir thoroughly
