Caramel Corn
I make at least one large batch of caramel corn every Christmas. It is delicious and everyone raves over it. It was my contribution to the Christmas party fare.
Preheat oven to 200 degrees. Pop 6 ounces of popcorn and set aside. Melt 2 cubes butter and then add 2 cups of light brown sugar, 1/2 cup Karo syrup, 1/4 teaspoon of cream of tartar, 1/2 teaspoon of salt. Cook to 260 degrees, stirring constantly. Add 1 teaspoon of baking soda and stir (the volume will double). Pour over the popcorn and mix until well coated. Spread in cookie sheets and bake at 200 degrees for 1 hour turning over at the 30 minute mark. Separate while hot.
