Qostibas Queso
2 cups shredded Monterey Jack cheese
8 chopped slices Kraft American cheese
10 oz evaporated milk
1+ cups fresh chopped spinach
0.75 cup fresh chopped onion
1 chopped tomatillo
2 medium sized chopped tomatoes (include seeds & gooey red liquid for added moisture)
Chopped jalapeno to taste (I used 3)
1 tbsp balsamic vinegar
1 tbsp smoked Spanish paprika
1 tbsp HEB paprika
1 tbsp Cholula sauce
1.5 golfball sized globs of sour cream
Combine all ingredients in crock pot or sauce pan, simmer for 45 minutes, stirring regularly.
