Caramella of Mint and Ricotta
A slightly modified Jamie Oliver recipe because sadly there was no Buffalo Ricotta available at my favorite Italian grocery store. The filling for this pasta was made from feta, lemon cest, nutmeg, mint, parmesan and a bit of lemon juice. Seasoned and rolled in fresh made pasta dough. Cooked and with a bit of lemon sauce made from lemon juice butter and some of the water the pasta were cooked in. Sprinkled with parmesan (and mint leaves but I was to lazy for that part)
