Four Story HIll Farm Guinea Hen

with Irish Oat Risotto, Figs, and Port-Black Pepper Reduction

 

The hen was very tender, though a bit salty. The skin was crisped perfectly and not fatt at all. The sauce tasted distinctly Chinese for some reason. The risotto complemeted the saltiness of the meat very well. This was a very well executed dish.
