stuffed tomato tian and a chop

I put together a tian with shedded summer squash, chopped red bell pepper, and farro (from the co-op) instead of rice, topped with some goat cheese (also from the co-op), and baked the mixture in a hollowed out tomato. the chop got a gastrique i made with a splash of cheap white wine to deglaze, then red wine vinegar, honey, a squeeze of tomato paste, finished with the juice from the rested chop. If I were to do this again, I think I would leave a little more meat on the tomato when i hollow it out- they were splitting a bit. I should think a bell pepper would be more than sturdy enough too.
