porchetta/porketta, beans with fennel, onion with a balsamic reduction

the porchetta or porketta is pretty popular in the parts of my beloved Iron Range with a large italian/american population. i did not grow up in such a place (we were mostly slovenes and finns at my end of the 'Range), but it's pretty popular in the hibbing area. anyway, I had a big fat pork chop which I butterflied, flattened, and prepared as above.
