Watermelon Gazpacho

6 cups cubed seeded watermelon

1 cup coarsely chopped seeded English cucumber

1/2 c. yellow bell pepper

1/3 c. chopped green onions

3 tbsp chopped fresh mint

3 tbsp fresh lime juice

1 tbsp extra virgin olive oil

3/4 tsp salt

1/2 tsp hot sauce

1 garlic clove, minced

1 cup cran-raspberry juice

 

Combine everything except the cran-raspberry juice in food processor or blender. Pulse until finely chopped. Stir in the juice.
