Enchiladas
Erin and I are back in the US.
We've got a lot on our plate, and as you can see, we've had a hard time polishing off everything. We haven't really contacted any of our non-reunion friends and family since we've been back, and we haven't approached the (perhaps too) daunting task of blogging the last two months.
Perhaps it's due to the shock of not being able to finish my food for the first time in 15+ years. Or maybe it's the realization that a horchata and cheese enchilada lunch for two at a strip-mall taqueria now costs $28.
Regardless, please bear with us. Everything here is bigger than we remembered, and it's taking us a bit of time to chew things over as we move down our list of priorities:
