Citrus Poached Tilapia, Southwestern Corn, and a Shrimp Skewer.
I was motivated to make this by a local seafood restaurant where I had almost this exact dish for way more than it was worth. (I say almost because their portions were much smaller.)
The corn is the same thing I've made with other food. I threw red onion in it this time, which I thought kind of overpowered the corn.
I poached the tilapia and shrimp in foil, with a little bit of butter, as well as a lime and an orange cut up and a splash of orange juice just for good measure. Amazingly enough both the tilapia and shrimp came out perfectly cooked. It seems like so often when you try to cook two different types of meat together one is always over-done, or under-done.
Total cost of this meal for two was under $10.
