      If I may suggest an option: if you're not vegan, steel-cut oats become silky and luxurious when simmered in milk (and a little salt, of course) instead of water. Though we've also steamed them in broth and used them as a savory filling for game birds, with some wild mushrooms and fresh herbs mixed in. And this gives me an INSANELY great idea...
