Japchae/Stir Fried Noodles with Vegetables

This is the japchae I made this Monday morning and it turned out great! It reminded me of the lo mein from the chinese restaurant, (but I don't eat out much because I'm on a diet and I want to know what's in my food, so I'd rather make it myself,) so this was perfect. I wasn't sure if it was going to be good because I had 340g of starch noodles and basically had to double up on the vegetables by 2-3 cups. Instead of the beef I used thinly cut chicken breast and flounder and it was still good. Since I couldn't eat all of the noodles myself, I packed the rest away for my sister and mother to take to work with them and when my mother heated it up her co-workers smelled it and asked her what it was because it smelled delicious. She said, "My daughter made this for me," with a smile on her face. Now she wants me to make it again next week. And this dish was perfect because not only is it vegetables, the noodles didn't make her (or my) blood sugar spike up, so it's diabetic friendly (As long as you don't gourge yourself!)
