Calvinist Heaven (Kálvinista mennyország)
My father was a Calvinist and his mother used to cook this dish when he was a little boy. Sadly I've never known this grandma of mine. Though I'm Roman Catholic, I do love Calvinist Heaven!
I made it today and served after Hungarian style green bean soup.
It isn't too sweet at all, rather sour and refreshing!
Of course its main ingredient is curd cheese (or quark), my favorite! I can't imagine it without the taste of vanilla, lemon zest and sour cream! If you like it more sweet you can add a double portion of sugar as good 8 tbs too.
2 l milk (add salt, 1 tbs sugar and seeds of a vanilla bean together with the pasta)
750 g pasta (e.g. tagliatelle) - cook tagliatelle in the milk and cover
750 g curd cheese (quark)
100 g melted butter (not hot!)
4 tbs powdered sugar
2 g vanilla sugar
4 egg yolks (4 egg whites for whip)
1 tbs lemon zest
1 cup light sour cream (you may use yogurt instead)
100 g raisins
100 g walnuts (roughly chopped)
Mix the ingredients.
Beat the 4 egg whites: until stiffen, then fold the whip carefully with the quark mixture
Add quark stuff to the pasta and stir carefully, scatter the top with a handful of raisins and walnuts then bake it in the oven (heat: 200°C).
Serve it warm.
