Place in oven at 200deg for approx 40 mins , for the last ten minutes add in some more leeks and ensuring the chicken thighs are ony top remove the lid for the last 10 mins to allow the thighs to brown . Serve with extra fresh thyme and bread to soak up the juices .Leftovers make great soup .
