Escabeche
This was one of the the day's specials, so I decided to venture away from my usual favorite, the Chimichanga, and give it a try. It was one of the tastiest things I've ever had. It was basically chicken, Mexican "meatloaf", jalapenos and some kind of delicious gravy on it all.
