That's a quality hot dog. All beef Vienna 6-1 with a natural casing.
Wikipedia says that the classic Chicago dog is made with an 8-1 dog but my distributer didn't even offer those. In general, it's harder to make a real Chicago dog in Cleveland than I would have guessed. I bought some fancy-shmancy pickles but decided they weren't right for a Chicago dog. I'm sure I can find poppy seed buns but I don't think my Whole Foods has them. Sport peppers? Good luck! I used Serrano. And I sliced them finely. According to Cook's thesaurus, sport peppers are *-spicy and Serrano are ****-spicy. Oops. The only solid link this "Chicago dog" has to the real thing is the celery salt. Celery salt is delicious, by the way.
The salads are from J Pistone. Broccoli, cherry and cashew. Pine nut, sun dried tomato and artichoke. They were both great.
