horchata, agua de tamarindo, agua fresca de fruta

Here are the recipes. I'll describe the deviations that I made from the recipes in the comments. And I'll link to the recipe sources, too. Also, I'd appreciate anyone's horchata tips and tricks. I would have like a stronger rice flavor and a more water-like consistency. I had a lot of sediment in my horchata. Thanks.

 

Horchata

serves 1 million

4 cups long grain white rice

3 cinammon sticks

1/4 cup agave syrup

12 cups water

 

boil 6 cups water. combine with rice and cinnamon. cover and soak overnight

combine with agave. blend until smooth

strain through triple layer of cheesecloth

add 6 cups water (or to desired consistency)

Resweeten as desired

 

Agua de tamarindo

4 oz tamarind

6 cups water

2 cups ice

2/3 cups sugar

 

simmer tamarind for 5 minutes

soak overnight

filter through sieve

add ice

 

agua fresca de fruta

4 cups diced watermelon

3 cups water

2-3 tsp lime juice

1 tbl sugar

 

blend sugar, watermelon and half the water

filter through strainer

add remaining water

chill

serve over ice
