Crispy veal sweetbreads, sicilian tuna aoli, salt packed capers
I decided to shoot this photo to emphasize the capers. The time has finally come to give these unsung heroes their due.
Fantastic which of course is why the camera decided to feature the capers over the sweetbreads.
