Putting the Pork Butt in the Smoker
After prepping the pork butt, here I'm sticking it in the Bradley Smoker. This is a sort of a small machine on the left side that auto-feeds wood pucks into a heating device in the main box - the main box large enough to hold a ton of food. Each puck is about good enough for 20 minutes of smoke; here I'm using a mix of hickory and pecan pucks.
This was an engagement gift from my Uncle Jim and Aunt Lori to Merci and me. Every week I look at it and think, I can't let this thing idle.
