Blueberry Cup Cake
Cup Cakes baked by my wife for her local coffe morning with the other mums from school.
And some for me :)
Recipe
Makes 12 to 14
110g unsalted butter @ room temp
120g soft light brown sugar
2 large eggs frre range
160g plain flour
140g fine ground polenta
1/2 tsp Bi Carb of Soda
1/2 tsp baking powder
1/2 tsp salt
125ml butter milk
130g blue berries fresh
Icing sugar to dust.
