Lobster and dover sole
There is almost nothing more to say: Lobster and Dover Soul as fresh as the sea itself. No funny business, focus on the fresh and keep the rest of the crap out of the way. Nice to see simplicity as the chief ingredient in these dishes (though Christina had a nice subtle fish sauce with hers). The peak moment for me: biting square into the claw as it squirt seawater and lemon-butter into your mouth followed by the undeniable lobster claw taste.
