Tonights Dinner

I've just finished eating this. Obviously there has been a few steps between this photo and the beer can chicken being inside my belly. Namely: an hour on the barbeque; the preperation of some capsicums stuffed with wild rice, sultanas and buffalo cheese by the lovely Venice and Will; the barbequing of some corn and asparagus and then a very enjoyable meal.

 

For those that are not aware of the awesome that is Beer Can Chicken, the basic recipe is get your hands on a fresh chicken (gutted and plucked of course). Get a can of beer (I've heard cola also works well and will be experimenting with this soon). Drink half the can, punch a few extra holes in the top. Rub your chicken with an assortment of yummy spices and olive oil to taste (use whatever spices you like!) then stand the chicken upright ontop of the can. You can then put this on a barbeque, in the oven or even on a grill.

 

We did it on the barbeque with the hood down for the most part. Apart from a few moments when fat from the chicken caught fire (easily fixed by moving it to the solid plate on the BBQ) the whole thing was very easy to prepare and cook. The result was delicious and probably the most tender juicy chicken I've ever eaten.
