Izumi's Tai & Suzuki
Tai (鯛) in the front, and Suzuki (鱸) in the rear. Izumi put a piece of mint leaf between the Tai and the rice, and a touch of Yuzu on top. Then he gave us a special sauce to dip instead of soy sauce. The results? A refreshing taste of SPRING in my mouth. Love it!
The Suzuki on the other hand, has a soft texture unlike the more common salmon and tuna.
