A Balanced Meal: Mayne-Style

Something Cathy and I threw together when she came over with a mixed bag of Waitrose goodies. The chicken was marinated in oyster sauce and dark soy sauce, with additional stock rubbed on, then baked in an oven for about an hour.

 

(I'd already started eating so that's why the chicken is cut open :P)
