The banana bread is not the typical quick bread, but rather a yeast sandwich bread. The recipe is basically a traditional white sandwich loaf with the addition of a banana.

 

The flavor of the banana is extremely subtle, almost imperceptible. The banana mainly changes the texture of the bread. Each slice is exceptionally light and soft but with a crisp crust; the banana also causes the deep brown color of the crust.

 

The bread is made from unbleached flour, yeast, water, honey, powdered milk, banana, butter, and salt. The finished loaf is brushed with clarified butter.
