The cultivar is "Spartan".
Richard pointed out that "Spartan" doesn't seem like something you'd really want to name a fruit cultivar. :)
(But holy crap, we have an apple tree in our back back yard! I didn't even know! I had a dream I was eating one last night, but it wasn't ripe... I am too eager.)
