Apple Butter

Delicious anytime, and easy to make:

 

INGREDIENTS

4 lb, apples, peeled, cored, and quartered,

2 cups, sugar,

1 cup, apple cider (or water),

1 tsp, kosher salt,

1 tsp, ground ginger,

1 tsp, ground cinnamon,

1/2 tsp, ground allspice,

1/2 tsp, ground cloves.

 

Method

1. Mix apple chunks with liquid, and all the other seasoning ingredients, together, and cook either in a crock pot, or heavy casserole pan (on low temperature), till all gets mushy.

2. Sterilize jars and lids.

3. Fill jars with apple butter. Wipe dry jar edges, and cover with lids.

4. Sterilize apple butter jars, immersed in boiling water for 10 minutes.

5. Remove jars from the pot, let them seal, and cool, and reserve for later use.

Notes:

1. Apples cooked for a few hours will end up brighter in color. The ones, cooked for 10 or 12 hours will of course be richer, and darker. Both just as good. I like to make differently colored batches for variety.

2. Try using light brown sugar or molases instead of white sugar.
