Unfortunately, I chopped off the chinese description of this dish. I'm sure it means earthen pot. Perhaps there's a ideogram that converts earth to the adjectival form.

 

Google translate shows the following translations for earthen. The 2nd glyph on the first line looks like the 2nd one to the right on the menu:
