Caramel Shortbread

    We made some Chocolate Caramel Slices as it was Easter weekend. They were yum.

      4oz/115g Butter
      6oz/175g Plain Flour
      2oz/55g Golden Caster Sugar

      Grease a 9 inch square cake tin (or anything else of equivalent area). Pre-heat oven to 180C/350F. Place the butter, flour and sugar in a food processor until it starts to bind together (we just rubbed in with our fingers as we didn't have a food processor - worked just as well and you get messy). Press the mixture evenly into the tin. Bake in oven for 20-25 minutes or until golden.

      Filling and Topping:
      6oz/175g Butter
      4oz/115g Golden Caster Sugar
      3tbsp Golden Syrup
      14oz/400g Condensed Milk
      7oz/200g plain chocolate broken into piece

      Make the caramel while the base is baking. Place the butter, sugar, syrup and condensed milk in a heavy based saucepan. Heat gently until the sugar has melted. Bring to the boil then simmer for 6-8 minutes, stirring, until very thick. Pour over the shortbread base and refrigerate for 2 hours or until firm.

      Once the caramel has set, melt the chocolate and allow to cool a little before spreading over the caramel. Chill in refrigerator for another 2 hours or until set and cut into rectangles.
