ham & spinach fried rice

i've been wanting to do this for awhile -- begin a series of photos of food that i've cooked for myself, with the recipe included! recipes will be brief; definitely not meant as full cooking tutorials (i'm sure you can find those elsewhere!). also, chinese cooking is quite improvisatory and measuring cups/spoons are rarely used -- i'll try to make up some sort of quantity for everything, but definitely take it with a grain of salt :)

HAM & SPINACH FRIED RICE

 

Ingredients

3 cups rice, cold

1 pack of sandwich style ham

2 eggs, beaten

1 stalk green onion, finely minced

2 cups fresh spinach leaves, finely chopped

1/2 cup peas/carrots, fresh, canned or froze

1/2 yellow onion

 

1 tablespoon rice wine (or dry sherry)

1 tablespoon oyster sauce

2 teaspoons soy sauce

salt and pepper, to taste

 

Preparation

1. Cook eggs till about 80% done; remove from pan and set aside.

2. Cook diced ham until browned. Add yellow and green onions and fry until fragant. Then, add spinach, cooked eggs, diced ham, carrots/peas to the pan.

3. Add rice. Mix everything thoroughly.

4. Add rice wine, oyster sauce, soy sauce, and salt/pepper.
