Cooking pork chops with recipe.
Citrus pork chops. Serves four.
Four good-sized pork chops. About an inch thick.
Rinse pork chops before dipping in the glaze.
Glaze recipe:
One-quarter cup soy sauce.
One cup apple juice.
Three tablespoons sugar.
Teaspoon salt and pepper.
Teaspoon maple syrup (real).
Combine liquids and microwave until warm. Stir in dry ingredients until sugar has dissolved.
Dunk pork chops in glaze.
Place pork chops in a sizzling pan greased with olive oil.
As pork chops cook, brush with glaze every few minutes.
Just before pork chops are finished, squeeze the juice from two or three tangerines onto pork chops. Place two tangerine halves in the pan to cook for flavor and aroma.
Remove pork chops from pan. Pour remaining glaze into the pan and let reduce.
Place each still-hot pork chop on top of a bed of mixed greens. After glaze is reduced, pour over pork chop and greens. Garnish with quarter of cooked tangerine.
